BANANA PANCAKES

Its pancake day! What a better way to enjoy one of the only foods that enjoys its own dedicated day. With lots of combinations such as ice cream, syrup, lemon juice, chocolate spread and fresh fruit as toppings, it is very versatile. This means it is great for every time of the day too! Below is a more health conscious recipe based on bananas, with no egg at all. It is a filling, wonderfully warm recipe that takes barely any time at all.


Makes approx 8 Pancakes

3 Bananas

65g Granulated Sugar

1 tbsp Brown Sugar

360ml Milk

250g Cornflour

1tsp salt

2tsp Baking Powder

2tsp Cinnamon

1tsp Butter (For Frying)

Honey/Syrup to serve

1. In a large bowl, mash the bananas. Add the granulated sugar, brown sugar then whisk till evenly combined.

2. Add the milk and whisk to combine.

3. Sift in the cornflour, salt, baking powder and cinnamon and whisk until completely combined.

4. In a medium pan over a medium heat, melt the butter and add around 40/50g of pancake batter.

5. Cook for 3-5 minutes or lightly until golden brown, then flip. Cook for 2-3 minutes more on the other side, then remove from the pan. Repeat the process with the remaining batter.

*Add slightly more butter to the pan if it seems dry. This will help the wetter mixture not stick to the pan.*

6. Serve with accompaniment of your choice. Honey or Golden Syrup are a great pairing with this pancake.
